Introduction:
"Zijuan is a kind of folk food in Shaanxi Province. Only in rural areas can we eat authentic Shaanxi Zijuan. Later, people's living standards improved day by day before it was slowly introduced into the banquet. Generally speaking, people in Western Shaanxi usually use leeks, eggs and vermicelli to mix the stuffing and get involved in it. It's delicious. However, there is no need to stick to the form of food, food is arbitrary, as long as healthy, as long as like! So, today I have a very nutritious Zijuan for you to taste, with my own dip, not delicious, no money ha! Ha ha ha With the dip sauce that I made with Shaanxi flavor, you can eat as much as you want. What are you waiting for? Let's get moving! "
Production steps:
Step 1: knock the eggs into the flour, stir well, mix with warm water to form a hard dough, and simmer for half an hour.
Step 2: soak dry agaric in warm water and clean it.
Step 3: soften the vermicelli with boiling water.
Step 4: clean the vegetables and carrots and cut them very small. Chop the tofu, fungus and vermicelli separately.
Step 5: cut ginger, 1 onion and cut into scallion.
Step 6: put all the vegetables in a large bowl, add the five spice powder, salt and cooked cooking oil.
Step 7: mix well, and the rolls are ready.
Step 8: roll the dough into a very thin round piece. Because the dough I rolled out was relatively large, I folded the two sides in the middle when taking pictures.
Step 9: evenly lay a layer of vegetables in the center of the rolled dough.
Step 10: dig a hole in the center and roll it up from the center to the side.
Step 11: roll as you lay vegetables until the whole dough is rolled into a long dragon shape.
Step 12: according to the size of the steamer, cut the roll into the right length and steam it for 10 minutes.
Step 13: in the process of steaming Zijuan, start to prepare unique dipping juice. Chop 1 green onion into minced green onion, peel 1 clove of garlic and smash it with a knife. Chop coriander into minced green onion and put it into a small bowl.
Step 14: add a small spoonful of salt and some oil to sprinkle the hot pepper, or put in the dried chili noodles and sprinkle with hot oil.
