Steamed Fish Head with Diced Hot Red Peppers

Production steps:
Step 1: fish head one, fish head suggest you choose the smaller one. I chose the smallest fish head and used the largest western dish in my family to fit it. Let the shopkeeper chop the fish head from the middle, clean it after going home and drain the water.
The second step: add one scallion, 30 grams of Baijiu, a little pepper, half a half salt, 5 pieces of ginger, five spices and a spoonful of white vinegar. If you have enough time, marinate the fish for 2 hours in advance. If the time is short, marinate for 30 minutes.
The third step Baijiu I use liquor Erguotou, or cooking wine or rice wine.
Step 4: spread ginger and scallions on the plate.
Step 5: then put in the fish head and spread red and green chopped peppers on the fish head. Both kinds of chopped peppers are available in supermarkets. Steam for 10 minutes.
Step 6: heat the oil at the bottom of the pot, turn off the heat when the oil is 80% hot, pour in the scallion section, let the remaining temperature of the oil cook the rich flavor of scallion.
Step 7: pour the scallion oil on the fish while it is hot.
