How to make money mushroom
Raw materials for making Lentinus edodes
Ingredient: 75g mushroom.
Ingredients: 50g minced fish, 3 horseshoes, 75g cooked ham, 12 fresh peas, a little Nostoc flagelliforme, 1 egg white.
Seasoning for making shiitake mushroom
15 grams of cooking wine, 1.5 grams of refined salt, 200 grams of clear soup, 20 grams of wet corn flour, a little flour, 10 grams of chicken oil.
The processing steps of Lentinus edodes are as follows:
1. Put the mushroom into the basin, add warm water, soak for about 1 hour, then change the water to clean the sediment, cut off the mushroom root with scissors, and select 12 mushroom discs with a diameter of about 1 inch. Pour water into the pot, bring to a boil, put in the picked mushrooms, take out the water again, squeeze it dry, put it face down, and sprinkle some corn flour on the plate
2. Put the minced fish into a bowl, add a little cooking wine, refined salt, corn flour and chicken oil, and stir vigorously. Put the egg white in a tray and use chopsticks to form a snow-white foam. Then pour it into the fish and stir it into paste. Chop the horseshoe into fine powder, put it into the mashed fish paste and mix well.
3. Use scissors to cut the remaining Lentinus edodes into 1 inch long, 1 minute wide strips, a total of 24; cut ham into 5 minute long, 2 minute wide, 1 minute thick slices, a total of 48 slices. Chop the remaining ham into small pieces.
4. Squeeze the minced fish paste into a ball with a diameter of about 8 minutes by hand and put it on the mushroom. Place the ham slice and the mushroom strip symmetrically on the minced fish ball to make a coin shape. Put a fresh pea in the middle. Sprinkle some minced ham on the outside of the mushroom strips, and garnish some Nostoc flagelliforme on the outside of the ham slices to form the money mushroom. Then steam the money mushroom in the drawer and take it out, and place it in the disc.
5. Pour the clear soup into the pot, add the remaining cooking wine and refined salt, bring to a boil, skim the foam, pour in the wet starch, hook into the sauce, pour in the chicken oil, and pour on the money mushroom.
