Introduction:
"Nuomi pearl ball" is a kind of snack made of glutinous rice dough wrapped in mashin onion stuffing, then wrapped with glutinous rice, kneaded and steamed. It's salty, sweet, soft and fragrant. The dough should be kneaded moderately hard and soft, and the glutinous rice should be soaked for more than two days for better taste. "
Production steps:
Step 1: mash the roasted peanut kernel and walnut kernel into fine powder. (I mashed it with a rolling pin in a big teacup)
Step 2: prepare a small dish of brown sugar, white sugar, scallion and minced pork;
Step 3: prepare a small dish of mashed walnut kernel, peanut kernel and fried white sesame; in addition, prepare 2 teaspoons of cooked lard.
Step 4: mix the brown sugar, white sugar, sesame and cooked lard, put them in the upper and lower plastic films, flatten them with a rolling pin, arrange the square with a knife, cut them into small squares, and then the stuffing is ready.
Step 5: take 500g glutinous rice flour and knead it into dough with 250-270ml warm water.
Step 6: knead the glutinous rice dough, flatten it, and cut it from the middle.
Step 7: knead the two long strips and cut them equally, each about 3cm in size.
Step 8: knead the preparation round, stick some dry powder, and turn out a pit with your thumb. The thickness around should be uniform.
Step 9: fill in a hemp heart, put some minced meat, peanut kernel, walnut kernel and scallion; pinch and close the mouth. (if you don't want to eat sweet, you can add pickled minced pork and walnut kernel, peanut kernel and scallion directly, and the taste will become salty.)
Step 10: after wrapping, knead into tangyuan;
Step 11: roll and press the glutinous rice dumplings in the soaked glutinous rice, and then knead them to make the glutinous rice firmly inlaid on the surface of the dumplings. (the glutinous rice should be soaked in warm water one day in advance and drained)
Step 12: apply oil on the steaming tray, put the prepared pearl balls on the steaming tray, put water in the pot and bring to a boil, then put them into the steaming tray, steam them over high heat for 12-14 minutes.
Step 13: turn down the heat and simmer for 2-3 minutes, then turn off the heat and get out of the pot.
