Production steps:
Step 1: prepare materials.
Step 2: a material: chop the pork into a bowl, add salt, soy sauce, sesame oil, ginger, onion and white pepper, and stir clockwise for one minute.
Step 3: B material: pour oyster sauce, soy sauce, chicken powder, salt, sugar and water into the bowl, and stir until the sugar melts.
Step 4: use a knife to gently dig a small hole on one side of the tofu, do not dig through the bottom, gently smear a thin layer of raw powder on the hole, fill the hole with "material a", gently press it tightly, and wipe the whole egg liquid on the surface (the side of the meat).
Step 5: turn on a low heat (I use a low heat in the whole process), put some oil in the pot, put the tofu just filled into the pot, fry it until both sides are golden, then pick up and put it on the plate for standby.
Step 6: turn down the heat, add some oil (there is some oil left after frying the bean curd, so I didn't put it), add some chopped green onion and stir until fragrant, then pour in "material B". After "material B" rolls, put the fried bean curd aside and simmer for about 5 minutes, turn off the heat, pick up the bean curd, pour the sauce on the surface and sprinkle with chopped green onion. (if you have a small casserole, do it in a small casserole in step 3. After simmering, sprinkle with scallions.)
Step 7: when I made Hakka tofu, I left a little material that I couldn't use up, a little pickled pork, unused whole egg liquid and a little ginger powder, which I used to make a "bean sprout and egg flower minced meat soup".
Step 8: Boil the water in the pot, pour in the minced meat and stir it (not a lump), then put in the bean sprouts, turn off the fire after rolling, pour in the egg liquid and turn off the fire.
Step 9: a good little meal.
