This year's moon cake is made according to the stuffing: Pie skin = 5:5, half of the filling and half of the crust. "
Production steps:
Step 1: prepare five kernel stuffing materials.
Step 2: put walnuts, melon seeds, pumpkin seeds, black sesame seeds and white sesame seeds into the oven and bake them. Put the roasted melon seeds into the fresh-keeping bag and crush them with a rolling pin.
Step 3: put the pumpkin seeds and walnuts on the chopping board, flatten them with the back of the knife, and then cut them up. Cut the preserved wax gourd into small pieces.
Step 4: put walnuts, melon seeds, pumpkin seeds, black sesame, white sesame and preserved wax gourd into a small pot.
The fifth step: put sugar, corn oil, Baijiu, rose sugar and water, then stir evenly.
Step 6: add glutinous rice flour and mix well.
Step 7: take a small bowl, put in the invert syrup, corn oil and alkaline water, mix well, then sift in the flour and milk powder, knead into the dough, and then wake up for 1-2 hours.
Step 8: weigh the crust and five kernel stuffing according to the ratio of 5:5 (25g crust and 25g stuffing), and rub them round for reserve.
Step 9: flatten the cake skin to cover the five kernel stuffing, and then push it slowly until the five kernel stuffing is completely covered.
Step 10: sprinkle a layer of hand powder inside the mold, put the wrapped dough into the mold, and press the dough into the shape of moon cake with the mold.
Step 11: lay oil paper on the baking tray and put the moon cake on the baking tray. Spray a little water on the surface of the moon cake.
Step 12: put the moon cake into the preheated oven and bake for five minutes, then take out and brush a layer of egg liquid. Then bake in the oven for about 15 minutes until the surface is golden. Then take it out and let it cool for a day. After the moon cake is oiled, you can eat it.
