Introduction:
"On January 3, the fourth year of Yuanyou (1089 A.D.) of song zhezong, Su Shi came to Hangzhou, where he had been away for 15 years. In May and June of the fifth year of rouyou reign in yuandongpo, Zhejiang Province. The heavy rain continued, the Taihu Lake overflowed, and large areas of crops were flooded. As Su Shi took effective measures as soon as possible, the people in Western Zhejiang passed the most difficult period. He also organized migrant workers to dredge the West Lake and build embankments and bridges, which changed the old appearance of the West Lake into a new one. People in Hangzhou are very grateful for Su Dongpo's good deed. It is said that he liked braised pork best when he was in Xuzhou and Huangzhou, so many people came to deliver pork. After Su Dongpo received it, he instructed his family to cut the meat into cubes, then cook the mature meat and distribute it to the migrant workers who participated in dredging the West Lake. The braised meat he sent to the village was affectionately called "Dongpo meat" by the migrant workers. At that time, the owner of a big restaurant in Hangzhou heard that people praised "Dongpo meat" as delicious. He also cooked it according to Su Dongpo's method and put it on the market to say "Dongpo meat" for sale. When this new dish came into the market, the business of that restaurant soon flourished. For a time, all restaurants in Hangzhou had Dongpo meat. Later, Hangzhou chefs agreed that "Dongpo meat" was the first famous dish in Hangzhou. Su Shi's braised pork was first created in Xuzhou, further improved in Huangzhou, and became famous in Hangzhou. Therefore, the food industry records of Xuzhou wrote: "Dongpo meat was created in Xuzhou, perfected in Huangzhou, and famous in Hangzhou."
