Production steps:
Step 1: prepare all materials.
Step 2: wash the chicken feet and put them into the pot. Add water to the pan without chicken feet.
Step 3: boil over high fire, turn off the fire and wash the foam.
Step 4: add water to the pot, wash the chicken feet, star anise and cooking wine, bring to a boil over high heat, change the low heat to boil for 30 minutes, and then boil the chicken feet.
Step 5: mince garlic, cut scallion into scallion, set aside.
Step 6: add 1 teaspoon vegetable oil and 1 teaspoon sesame oil to the pot, heat over low heat, add pepper and stir fry until fragrant.
Step 7: pick up Chinese prickly ash, add garlic and stir fry until fragrant
Step 8: add chili oil, oyster sauce and stir fry the red oil.
Step 9: add enough water and salt, bring to a boil and turn off the heat. Add scallion and stir well. Pour into container to cool.
Step 10: wash the boiled chicken feet several times and soak them in ice water for one hour.
Step 11: wear disposable gloves and bone the soaked chicken feet.
Step 12: soak the boneless chicken feet in the cool marinade for more than 5 hours.

Vegetable oil: 1 tbsp
Sesame oil: 1 teaspoon
Chili oil: 1 tbsp
Oyster sauce: 1 / 2 spoon

Note: 1. If you like to eat more vigorous, simmer for 20 minutes. Ice water immersion is indispensable. Monster dad likes soft food, so I cook it for a long time, and it's easier to remove the bone. 2. You don't need to remove all the bones when you remove them. Most of them can be removed. I usually keep the bone near the claw, so that the claw is not easy to loose, the appearance will be good, and the taste will not discount. 3. The longer the boneless chicken feet soak in the marinade, the better the taste. I'll do more at a time and work hard that day. Put the rest in the refrigerator, and the next day put it in the microwave oven for a few minutes. It's soft and tasty, and the taste is perfect (see Figure 2).
