Introduction:

Production steps:
Step 1: wash the ribs with clean water.
Step 2: blanch under cold water.
Step 3: when blanching, prepare seasoning: one can of black beer (the degree of black beer is not high, only 8 degrees, so one can be put in), vinegar, raw soy sauce and old soy sauce.
Step 4: Chinese prickly ash, large ingredients, dried pepper, rock sugar, green onion, ginger and garlic.
Step 5: take a "hot bath" of the ribs, take out the water to rinse.
Step 6: stir fry the spareribs in the pot and put in all kinds of prepared seasonings. (I powdered the big ingredients and Chinese prickly ash with a dry mill, because it's more convenient for children to eat.)
Step 7: stir fry and color the ribs, then add a can of black beer. (don't worry. This sparerib needs to be stewed for more than an hour. The alcohol has already been volatilized. It only has the smell of beer. It's absolutely no problem for children to eat it.)
Step 8: you don't need to add water to the beer. After boiling, simmer for one and a half hours. (if time permits, simmer over low heat. If you are in a hurry, use pressure cooker for 10 minutes.)
Step 9: in the process of stewing spareribs, begin to prepare the side dish: cut garlic sprouts into pieces.
Step 10: soak the vermicelli in warm water. (this is the pure Northern Shaanxi potato noodles brought by my mother's relatives in my hometown. I usually hate to eat them.)
Step 11: cut tofu and cabbage into pieces.
Step 12: cut the potatoes.
Step 13: time is up, and the soup of the ribs is almost finished. Add potatoes, tofu and cabbage. Don't be afraid to paste the pot, because the cabbage will produce soup later. Now start to put salt. If you put salt in advance, the spareribs will not stew.
Step 14: when the vegetables are almost cooked, put in the vermicelli for a while.
Step 15: put garlic sprouts into the pot and turn off the heat.
