Homemade marinated tofu
Introduction:
"The best way to make tofu is to use brine. Now there are more tofu made of gypsum in the market. Gypsum tofu is whiter than brine tofu, but eating more gypsum will do more harm to people's kidneys. Brine tofu tastes soft and tough, hard, with bean flavor, white in color, slightly yellow, coarse and old in texture, commonly known as "old tofu."
Production steps:
Step 1: 200 grams of dry soybeans (soaking time is 4-6 hours in summer, 7-9 hours in spring and autumn, more than 10-12 hours in winter), fully soak and wash for standby;
Step 2: put in soybeans, add about 1500ml of clean water, until the water level of soymilk machine reaches 1900mL, grind into soymilk;
Step 3: filter the ground soybean milk about 1500ml;
Step 4: put the filtered soybean milk into the boiler and bring to a boil;
Step 5: dissolve 8 g brine tofu king in 150ml water for preparation;
Step 6: after the soymilk is cooked, turn off the heat. Then, use a spoon to stir the soymilk clockwise to the vortex shape (at this time, the soymilk temperature is about 96 ℃), and quickly pour the dissolved brine into the soymilk along the periphery of the boiler;
Step 7: after standing for 3-5 minutes, stir 3 times from the bottom of soybean milk with a spoon;
Step 8: after 10 minutes, marinated bean curd is solidified, wet the bean curd cloth (be sure to wet the water, otherwise it will stick to the bean curd) and put it into the abrasive tool diagonally, then put the bean curd into the abrasive tool with a spoon;
Step 9: wrap the bean curd brain with bean curd cloth (I forgot this one again, ha ha, but it doesn't have any effect), and use a grinding tool without holes to put 7% full water pressure on the wrapped bean curd brain;
Step 10: 15 minutes later, homemade brine tofu is successful! (the time of pressing can be determined according to the soft and hard degree of tofu you like. )
Step 11: take out the original sample.
Step 12: cut it into pieces, and my husband will eat it with sauce!

Note: making tofu looks at so many steps. It's very complicated. In fact, it's very simple. If you have time, you might as well have a try. After you can make tofu, you don't want to go out to buy it any more, because the taste is so different. You really don't know if you don't make tofu. You'll be scared when you eat it.
