Raw materials for steamed turtle
One fresh turtle (about 1000g), 10 Tricholoma matsutake, 150g canned bamboo shoots, 1500ml chicken soup, 150g chicken, 20g scallion, 10g ginger, 30g cooking wine, 2.5G refined salt, 1g pepper noodles and 1.5g monosodium glutamate.
Processing steps of steamed turtle:
1. After the live turtle is slaughtered and blooded, remove the gall, wash it, chop it into pieces, put onion, ginger, cooking wine and refined water into the pot, fish it in cold water, wash it and control it dry.
2. Slice the canned bamboo shoots and ginger, cut the scallion into small pieces, remove the fascia of the chicken, chop it into mud, and soak it in 500ml chicken soup.
3. The turtle is steamed with onion, ginger and cooking wine until the bone can be removed. Remove the bone and put it into the basin. Wash the water hairy Tricholoma matsutake, place the mud and bamboo shoots neatly. Then put the onion, ginger, salt, pepper, cooking wine and chicken soup. Put the basin into the pot and steam it over high heat.
4. Decant the steamed turtle soup into a small pot, heat it up, and flush the chicken paste soup into it. When the chicken paste floats and coagulates, take it out with a small eye colander, and pour the soup into the turtle basin.

Production method

Steps:

3. Take a soup bowl, add turtle meat, scallion, ginger, soup, steam for 50 minutes, remove;
4. In the soup bowl, add minced ham, bamboo shoots, mushrooms, rape, onion, ginger, monosodium glutamate, cooking wine, refined salt, pepper, seal with oil paper, steam for 15 minutes, take out, open the oil paper and pick out onion and ginger;
5. Finally, pour the minced chicken into the turtle soup and bring to a boil.
Tips: this dish is smooth with rotten mushrooms and tastes delicious. Turtle must be washed to avoid fishy smell. A little pepper will taste better.
