Scallion biscuit with electric pan
Introduction:
"A recipe for biscuits from Jun Zhi: crisp biscuits with scallion oil. If you are interested, you can go to see the original version of Jun Zhi. I have a little change here. Ingredients: water oil skin: 100g flour, 15g corn oil, 20g sugar, 2G yeast, 45g water. 1: 25g corn starch, 13g lard, 1.5g salt, 6G shallot. 2: 25g corn starch, 13g corn oil, 1.5g salt, 6G shallot. I used white sugar to replace maltose in the original water oil skin. I used lard and corn oil to replace butter in the pastry Two kinds of biscuits have been made; chives. I'll replace them with shallots. "
Production steps:
Step 1: mix the water and oil skin materials and knead them into smooth dough.
Step 2: cover with plastic film and ferment to twice the size.
Step 3: knead the fermented dough for a while and let out the air. Cover with plastic wrap and wake up for 15 minutes.
Step 4: I made two kinds of pastry: Lard and corn oil. Turn lard into liquid, add corn starch, salt and shallot powder, knead for a while, knead into a ball. Corn pastry is the same.
Step 5: take half of the water oil skin, flatten it and wrap it in a kind of pastry.
Step 6: squeeze like a bun.
Step 7: after wrapping, seal downward, cover with plastic film and relax for 15 minutes.
Step 8: sprinkle some dry flour on the chopping board and roll the dough into a rectangle.
Step 9: fold both ends toward the center.
Step 10: fold again.
Step 11: after 90 ° rotation, roll it into thin sheet. Repeat the above steps to fold once.
Step 12: fold the dough twice, roll it to 2mm thick, and cut off the irregular edges.
Step 13: poke a hole in the dough with a fork.
Step 14: then cut the dough into small squares. Please ignore the very uneven squares I cut with my kitchen knife.
Step 15: put the cubes on the chopping board, leave some space in the middle, spray some water on it, and continue to ferment for 25 minutes. I didn't have a spout, so I covered it with wet gauze for a while.
Step 16: in order to distinguish the types, I pressed the corn oil biscuit into a circle with a bottle.
Step 17: preheat the electric biscuit pan until the indicator is off, put the biscuit in, cover and bake for 3 minutes, turn it over and bake for 3 minutes.
Step 18: cool and serve.
Materials required:
Flour: 100g
Corn oil: 15g
Sugar: 20g
Yeast: 2G
Water: 45g
Corn starch: 25g
Lard: 13g
Salt: 1.5g
Shallot powder: 6g
Note: 1, onion powder should be chopped as much as possible. 2. Biscuits should be rolled as thin as possible, so that they will keep crispness when they are cold. 3. Because the temperature of the electric cake pan is relatively high, you should pay attention to the skin color at any time during the baking process, and do not scorch. The baking time I give may not be suitable for all pancakes. 4. I think the biscuits are salty and can reduce the amount of salt. 5. With lard and corn oil, I think there is little difference. The pancake pan is not as crisp as the oven, which does not show the advantage of lard. This biscuit is really delicious, with strong onion flavor and crispy taste. It's worth trying!
