Because I specially added white jade mushroom (a kind of crab mushroom), so that this bowl of noodles is no longer single in taste and nutritional value. Production steps:
Step 1: add warm water to the flour and stir until it is completely dried, then knead into dough.
Step 2: after half an hour, roll the dough with a rolling pin to the thickness you like, evenly spread a layer of corn flour, and then fold the rolled dough with the help of a rolling pin like a folding fan.
Step 3: cut noodles, width can be decided according to personal taste. Then hold the top layer of the noodles and open it about 10 cm.
Step 4: continue to put out the first layer of the noodles.

Step 7: cut onion and ginger.
Step 8: dice the tomatoes.
Step 9: cut off the end of white jade mushroom, clean it and divide it into small pieces.
Step 10: break the eggs into a bowl, stir fry them into egg cakes, then cut them into small pieces with a shovel, and set aside.
Step 11: add oil to the frying pan, heat the oil, and then add onion and ginger.
Step 12: stir fry the mushroom for one minute.
Step 13: add diced tomatoes, then add two spoonfuls of thirteen spices, and stir well.
Step 14: when the tomatoes are almost fried into red juice, pour in the scrambled eggs.
Step 15: season with salt.
Step 16: add a small amount of soy sauce and stir well.
Step 17: bring the water to a boil and add the noodles.
Step 18: after the noodles are boiled for two heats, put in the spinach which is clean and slightly cut to be cooked, turn off the heat, remove the noodles from the bowl, pour in the scrambled tomato and egg juice, and then eat!
