Roast duck in the new year
Introduction:
"I've always wanted to learn how to make roast duck, and I like to eat crispy skin. So before I made it, Google used many ways to make roast duck, and I felt dizzy. It seems that if I want to make crispy skin, I need to blow bubbles. Finally, I baked a delicious roast duck by DIY myself ~ ~ Happy New Year ~ ~ goodluck 2012!"
Production steps:
Step 1: freeze a duck, clean it after thawing, cut the belly and lie on the chopping board
Step 2: apply salt and pepper on the whole body ~ massage the duck for a few minutes to make salt and pepper penetrate into the skin completely~
Step 3: mix ingredients other than honey with some water, then give the duck a shower, and let the duck lie in the "big bathtub" with plastic wrap and put it in the refrigerator overnight
Step 4: get up the next day and pour the pickled duck juice into the bowl. Boil a pot of boiling water in the pot, hold the duck wings, pour boiling water on the duck several times, when pouring, you will see the duck skin tightening, but also quack!!
Step 5: mix well with honey, wine and some water, wait for the duck to drain water, brush a layer of honey water on the skin when it is hot, and let it dry in a ventilated place
Step 6: after 1-2 hours of air drying, brush with honey water, leave some honey water in the bowl for standby, and continue to air dry for about three hours.
Step 7: spread tin foil on the baking tray, slice potatoes and onions, and then spread.
Step 8: set up the duck~
Step 9: wrap the duck bones in tin foil to avoid scorching.
Step 10: preheat the oven for 5 minutes, then adjust the temperature to 200 degrees, sprinkle with the sauce of the pickled duck, pay attention to the observation during the roasting process, and keep turning over the duck in the middle. Cover the burnt area on the skin with tin foil.
Step 11: when the duck is almost baked, brush the remaining honey water, turn to the fan and continue to blow for more than ten minutes, and the delicious roast duck will come out of the oven~
Step 12: cut the duck in half. It looks a little burnt, but it doesn't taste burnt. It's very fragrant~
Step 13: two people eat up half a duck, and the potato chips under the mat are delicious! All the flavors seeped in, plus the smell of onion ~ ~ ~ endless aftertaste~~

Note: it's my first time to make roast duck, but I feel that the oven is not evenly baked. At the end of the roast, I basically covered the duck with tin foil ~ ~ when I was a child, I saw that others made roast duck in a large vat (I don't know if there was any carbon in it), and then used an iron rod to go through the duck and bake it. Ah, how many years have that been~~
