Production steps:
Step 1: mix all the ingredients a, stir slowly to form a ball, and then stir at medium speed to form a slightly smooth shape (in this step, I used a bread mixing procedure, 20 minutes). Add salt free butter, stir in slowly, and then stir at medium speed to make a smooth dough (second mixing procedure, 20 minutes).
Put the dough into the container, cover with plastic wrap and relax for 20 minutes.
Step 2: divide the dough into 8 equal parts, roll round, cover with plastic film and relax for 10 minutes.
Step 3: knead it into a cone by hand.
Step 4: roll out a 20-25cm triangle.
Step 5: cut 6-7 cm in the middle of the wide end, pull it into a triangle on both sides, then roll it down, and bend the two corners inward.
Step 6: put into the baking pan and relax for 40 minutes. (like hard taste, relax for 20 minutes)
Step 7: brush with egg yolk and sprinkle with a little white sesame.
Step 8: put into the preheated oven, bake at 175 ℃ for 20 minutes, remove and brush with melted butter.
Step 9: continue baking for 5 minutes, remove again and brush with melted butter.
Step 10: bake for another 5 minutes until the surface is golden.
Materials required:
High gluten flour: 200g
Low gluten flour: 100g
Sugar: 50g
Dry yeast: 2G
Baking powder: 1 / 4 tsp
Cheese powder: 10g
Milk powder: 15g
Salt free butter: 60g
Egg yolk: 1
White Sesame: 1 teaspoon
Salt: 1 / 2 tsp
Note: if you like hard taste, you can halve my relaxation time. Like soft point, you can extend the relaxation time appropriately, my comparison is in the middle. You may not brush the butter for the last two times, but it will add a lot of fragrance after brushing. No cheese powder can be added.
