[homemade red bean paste] - cantonese moon cake filling
Introduction:
"Red bean paste, a common sounding material, has a lot of knowledge. Usually, when we cook to eat, or do to spread bread, and do all kinds of snacks and other fillings, the amount of sugar and oil will be more casual, and mostly from the perspective of health, less oil and less sugar. But if it is used to make moon cake stuffing, fried red bean paste is relatively more demanding. Not only the amount of sugar and oil is relatively high, but also it needs to be fried dry, because if the bean paste is too wet, that is, too much water, in the process of baking the moon cake, it will easily expand and cause the moon cake to bulge or crack, so that the cake and skin will separate. I fried these bean paste to make cantonese moon cakes before the Mid Autumn Festival, so the content of sugar and oil in the formula is relatively high. Anyway, once a year, it doesn't matter. Don't eat too much. "
Production steps:
Step 1: prepare the red beans.
Step 2: remove the bad beans, clean them and soak them in water for half a day.
Step 3: pour into the pressure cooker and add appropriate amount of water.
Step 4: bring to a boil over high heat and add gas, then turn to medium heat and cook for about 20 minutes until rotten. (if you add too much water, pour it out at this time. Otherwise, the mixed bean paste is very thin and it takes a lot of time to fry.)
Step 5: pour the cooked red beans into the blender and stir them into bean paste.
Step 6: stir the red bean paste into the non stick pot, add the sugar and stir fry until all the sugar is melted.
Step 7: add corn oil three times.
Step 8: just add it, as shown in the figure, oil will flood the surface.
Step 9: stir fry each time until the oil is completely mixed into the bean paste as shown in the picture, and then continue to add the oil.
Step 10: after adding oil three times, the bean paste has begun to become a little dry.
Step 11: continue to stir fry until the bean paste is wrapped into a ball and does not stick to the pot. Add the cooked powder and stir fry evenly to get out of the pot.
Materials required:
Red beans: 250g
Corn oil: 110g
Fine granulated sugar: 200g

Note: poem phrase: 1: if it is used to make moon cake red bean paste, fry must be slightly dry some, so as not to affect the production of moon cake. 2: Cooked powder can effectively absorb the excess water in bean paste. (cooked flour is the flour that is slowly fried in a pan without oil and water) 3: oil should be added in several times, and each time you have to stir fry until it is completely mixed with bean paste before you can continue to add the next time.
