Braised pork with Agrocybe aegerita
Introduction:
"In fact, different people have different opinions on this dish. There are no spices such as anise and cinnamon, because they don't want too many spices to suppress the aroma of Agrocybe aegerita. But after living in Chongqing for more than 10 years, they can't bear to give up hemp and spicy, so they put dry pepper and Chinese prickly ash. Production steps:
Step 1: wash the dried Agrocybe aegerita and soak it in water in advance.
Step 2: put the pork into boiling water and cook until it is broken. Gently poke the chopsticks to insert it. No blood will flow out.
Step 3: slice onion, ginger and garlic, cut dried pepper into shreds. A spoonful of soy sauce, a spoonful of vinegar, a spoonful of cooking wine, a spoonful of oyster sauce, starch and water, mixed into sauce. I put rock sugar in the sauce, too.
Step 4: cut the cooked pork into long strips, remove the roots of soaked dry Agrocybe aegerita, cut into appropriate length, and shred the red pepper and green pepper.
Step 5: heat the pan and cool the oil (the bottom oil is a little less, because the streaky pork will come out later). After the oil is hot, pour in the streaky pork and stir fry until the fat spits out the oil.
Step 6: pour in onion, ginger and garlic slices, dried shredded pepper and Chinese prickly ash, and stir fry until fragrant.
Step 7: add tea tree mushroom and stir fry until it is cut off.
Step 8: add the sauce along the edge of the pan and stir fry until the water boils.
Step 9: turn the heat to the minimum, cover the pot and simmer until soft and rotten as you like. (I stewed for more than an hour, during which I watched two episodes of the pirate king and took a bath. O(∩_ ∩)O)
Step 10: turn the heat to collect the juice.
Step 11: add green pepper and red pepper, add appropriate amount of salt according to personal taste and turn well.
Step 12: turn off the heat, add monosodium glutamate and turn it over.
