As for the electric egg beater, a colander or a spoon can be replaced. As for butter, hehe, I think it's all animal fat, just a little lard, so I use lard. This is a cake made with an electric rice cooker, red jujube flavor. Although the final product didn't meet my requirements, when it appeared in front of me, it still surprised me. Production steps:
Step 1: get all the materials ready.
Step 2: separate the egg yolk protein and put it into oil-free and water-free containers. Add 10 grams of sugar into the yolk, and stir with a hand beater to make it fluffy.
Step 3: add the melted lard and stir until it is completely blended. The state will be thicker than that without lard.
Step 4: sift in flour.
Step 5: add the jujube grains, turn them up and down in the irregular direction, and mix them evenly to form the egg yolk paste without granules, and set aside.
Step 6: add 2 drops of white vinegar to the protein, stir quickly with a colander or spoon (three chopsticks are not easy to use, but I use a spoon for eating, which is easy to use) until it bubbles, and add 20 grams of sugar.
Step 7: stir until frothy, add 20g sugar.
Step 8: stir until wet foaming, add 20g sugar for the third time.
Step 9: continue to stir until it is close to hard foam. When it is lifted up, straight sharp corners can appear on the surface of protein. At this time, the upside down basin, protein will not fall, will not move
Step 10: Take 1 / 3 of the protein, add it into the egg yolk paste, mix it up and down with a spoon in an irregular direction. (stir it up and down, just like cooking, not in circles)
Step 11: pour the egg yolk paste back to the remaining 2 / 3 of the protein, and continue to stir it in an irregular direction by turning it up and down. The cake paste should be in a state of no particles, fluffy, light and delicate.
Step 12: pour the cake paste into the electric rice cooker, press the cook button, and when the indicator light jumps to keep warm, it's OK.
