Introduction:
There are different names for channel catfish: Shanghai is called "channel catfish", Sichuan is called "Jiangtuan", Guizhou is called "Xiyu", English is called "Longsnout catfish". Jiangtuan high protein, low fat, rich in vitamins and trace elements, is a good tonic nutrition. Production steps:
Step 1: Boil 1000g water in a pot, add the prepared ginger slices, scallion, 50g cooking wine, a little salt, a little pepper, and boil in boiling water for 1 minute.
Step 2: while boiling water, start processing the fillets. Choose about 1.5 Jin of tender fish, tender but not firewood, slice and wash, add salt, chicken powder, pepper and cooking wine, mix well. Finally, add a little egg white.
Step 3: heat 1000g chicken soup or high soup and add into the container.
Step 4: put the fish fillets in a water pot, first add the fish bones, boil for 1 minute, then add the fish fillets, and cook for 1 minute.
Step 5: then quickly pick up the fish and drench it with cold water.
Step 6: turn the chicken soup into the pot, add a little salt, chicken powder and pepper.
Step 7: after the chips are bleached, add them to the pan.
Step 8: pour the fillets into the boiling broth / chicken soup pan.
Step 9: add special tomato sauce (2000g tomato, 400g sugar, 150ml vinegar, 50g salt, 15g five spice powder, proper amount of onion and garlic, a little pepper)
Step 10: bring to a boil and sprinkle with a little scallion.

Note: 1. Sincerely suggest that you let the boss help you deal with the fish stall, save a lot of things, most of the quality of fish fillets are better than their own groping. 2. For the first time, don't overcook the fillets after they are boiled. It's only 1 minute. Then, when you pick them up, you need to boil them in cold water to cool the whole fish quickly. 3. If you don't want to bother with ketchup, you can buy ready-made bottled products and stir fry them with tomatoes. The effect is good.
