Secret Wuchang Fish
Introduction:
"I only drink Changsha water, but also eat wuchangyu" is a kind of wuchangyu that appears in the poetry of the Communist Party of China. We can see the reputation of wuchangyu... Wuchangyu is a kind of bream. Its meat is tender, delicate, delicious and rich in protein. It can prevent anemia, hypoglycemia, hypertension and arterial hardening. This Wuchang fish made by me is a very popular dish on the annual dinner table with its unique method of making, gorgeous color and strong taste
Production steps:
Step 1: marinate the fresh Wuchang fish with the method of making black carp pieces, and prepare onion and ginger. (for pickling method, see the making of black carp)
Step 2: put the frying pan in high heat, pour in soybean oil and heat it for 60-70%. Add Wuchang fish and fry until golden on both sides. Sprinkle shredded ginger on both sides and fry until fragrant.
Step 3: pour in vinegar, soy sauce and Huadiao wine. After boiling, adjust the fire to the minimum, sprinkle with sugar, and turn patiently.
Step 4: cook both sides of the fish over low heat, then wrap the Wuchang fish in the sauce, sprinkle with green onion, turn off the heat, fill the plate, decorate with red pepper, serve!
Materials required:
Wuchangyu: 1300 G
Soybean oil: 150g
Ginger: 15g
Shallot: moderate
Chopped pepper: right amount
Salt: 25g
Sugar: a little
Vinegar: right amount
Soy sauce: right amount
Huadiao wine: moderate
Note: in the whole production process, did not put a drop of water! Ensure the original flavor of Wuchang fish. (the key is to grasp the heat)
