Introduction:

Production steps:
Step 1: remove the pigskin hair and wash it (this is the first time to remove the hair);
Step 2: other materials are ready;
Step 3: put the pigskin into the pot, add twice water, add 1.5 tbsp cooking wine and ginger slices, and cook for 30 minutes;
Step 4: when boiling the pig skin, cut the shallot into sections, shred carrot, cut the red pepper into a circle, and chop the garlic;
Step 5: take out the pigskin and let it cool slightly. Scrape the remaining fat out with a knife carefully. The cleaner the scraping, the better. Then check and pull out the pig hair that has not been pulled out (the second time);
Step 6: cut the pigskin into thin silk;
Step 7: add proper amount of oil into the pot, stir fry red pepper, garlic and ginger slices over low heat until fragrant, then add shredded carrots and stir fry over high heat;
Step 8: add pig skin, stir in cooking wine, sugar and soy sauce, and stir well;
Step 9: finally add the scallion, stir fry with salt and chicken essence until the scallion is cut;
Step 10: Sheng pan.
