Production steps:

Step 2: remove the shell and core of fresh lotus seeds (lotus core is not easy to remove, so lazy), wash and steam them in steamer;
Step 3: wash the yam, put it into the steamer and steam it over medium heat for about 20 minutes;
Step 4: after the yam is steamed, take out the yam, remove the skin of the Steamed Yam, and then find out a spinning net (the best kind of medicinal basket) to buckle on the chopping board. Use the spinning net basket to make the peeled yam taste very good!
Step 5: the good yam mud is very delicate and elastic.
Step 6: after the lotus seeds are steamed, take them out from the steamer and put them on the plate. Scrape the yam mud off the gauze (mix it well with some white granulated sugar, I don't like it very sweet, so I don't add it any more). Prepare a clean bowl for the lotus seed tower;
Step 7: take a clean rice bowl (the bowl should not be straight, so it is not easy to stack lotus seeds), and slowly overlap the lotus seeds along the circumference of the bowl to make the shape of the lotus seed tower;
Step 8: put the yam mud in the bowl carefully, and then compact it gently;
Step 9: put the lotus seed tower in the steamer and steam for 10 minutes. This step is to make the yam paste and lotus seeds more compact and taste better;
Step 10: put blueberry sauce and crystal sugar into the milk pot, then add a little boiling water to mix well, heat over low heat until the sugar melts and blueberry sauce becomes a paste;
Step 11: wash the mulberry leaves and immerse them in water for a few seconds, drain the water, cut off the petioles and spread them on the plate;
Step 12: after steaming the yam lotus seed tower, take it out carefully, then turn the bowl upside down on the mulberry leaves, and drizzle with blueberry sauce.
