Fried eggplant with Hangzhou pepper
Introduction:

Production steps:
Step 1: cut pepper, eggplant and ginger into shreds, slice garlic and set aside;
Step 2: shred pork, mix with flour, soy sauce and oil for 30 minutes;
Step 3: heat the frying pan, do not put oil in the pan, add shredded eggplant and stir fry until soft, then put it out and set aside;
Step 4: wash the pan, heat it again, add proper amount of oil and saute ginger and garlic;
Step 5: stir fry the shredded pork until discolored and remove;
Step 6: leave the remaining oil in the pot and stir fry the Hangzhou peppers;
Step 7: add shredded eggplant, stir well, and add appropriate salt;
Step 8: add shredded meat;
Step 9: stir well and add soy sauce.
