Introduction:
"Guokui is one of the eight monsters in Shaanxi. It is called "Guokui like guogai", that is, it is shaped like a helmet. As the name suggests, it is also called Guokui. Guokui is well-known for its fine workmanship, such as "dry, crisp, white and fragrant". Hard and chewy, crisp inside and crisp outside, white and shiny, mellow and delicious. In fact, there are many kinds of pot helmets. Pot helmets like pot covers are just one of them. It's hard for you to imagine the size of this kind of pot helmets. It's like a wheel rather than an accurate pot cover. However, this kind of pot helmet can't be made at home. I bought it from a farmer. The farmer brother told me that it would take six hours to cook the pot helmet in a small fire (wheat straw) in a rural tieao pot. However, it's best to eat dry and chewy after making this kind of pot helmet. I also like to eat this kind of food, but it's really not easy to buy authentic ones, even if I'm in Xi'an. But there are many other kinds of Guokui. Today, I'll bring a home version of Guokui, which is also the most commonly eaten by Xi'an people
Production steps:
Step 1: put flour, yeast and sugar in the bowl.
Step 2: slowly add warm water to make flour and dough, just as soft and hard as steamed bread.
Step 3: cover the bag and wake up to twice the size
Step 4: take out the dough and add a little edible alkali on the chopping board.
Step 5: continuously knead the noodles to make the alkali noodles even. During this period, dry flour should be added continuously to make the dough even and hard. Only in this way can the dough be chewy and fragrant.
Step 6: dry the flour into a lid
Step 7: don't wake up twice, put the dough directly into the preheated electric pan.
Step 8: cover the lid, heat it up and down, set the shape on both sides, turn it in the middle for several times, blink your eyes with a bamboo stick, and exhaust for about 8 minutes.

Add a small spoonful of sugar to remove the flavor of baking powder. 2. Adding edible alkali can further remove the flavor of fermented powder and increase aroma. Many people like to eat pasta with alkali. 3. Because the characteristic of Guokui is dry and fragrant, it needs to add dry flour twice (just like Mantou in Shandong Province), and it doesn't need to wake up again.
