Amaranth box
Introduction:

Production steps:
Step 1: knead the flour into a smooth dough with cold water for standby. The dough should not be too soft. Wash the amaranth and drain the water.
Step 2: cut amaranth into smaller pieces.
Step 3: divide the dough into small pieces and roll them into round slices with a rolling pin.
Step 4: spread the rolled pancake on the pan with a little vegetable oil, and place amaranth on the pancake.
Step 5: repeat step 3, cover another piece of pancake on it, press the overlapping edge of the two pieces of pancake a little, and cover the pan.
Step 6: turn on a medium low heat for about 3 minutes, turn the dough carefully and fry it for about 4 minutes. As long as the dough is well cooked, it can be out of the pot,
Step 7: mash garlic cloves with salt, add appropriate amount of cold water, soy sauce, and cooked rapeseed oil. Cut the amaranth box into two semicircles from the middle, roll up one semicircle, dip it in the garlic sauce, it's very delicious.

Note: 1. The dough should not be too soft. Spreading some corn starch or corn flour during rolling can have a good non stick effect. 2. The pan should be thick bottomed and heated evenly, otherwise it is easy to paste. 3. If it doesn't stick to the pot, you can brush less oil or even no oil.
