Those who go out all the year round must have a bowl of stewed noodles once they return to their hometown, because it's the taste of their hometown. My family also likes to eat noodles, and I'm good at making noodles. Ha ha, Lao Wang sold melons once. I've made mutton stewed noodles before, which is the most common one. Today, it's a change to make noodles in chicken soup. It's just that the chicken soup needs to be a little bit higher. It must be domestic, at least free range. What I use today is an old hen that I've raised for two years in the mountains. It's used to stew soup. One word: fragrant
Production steps:
Step 1: wash the old hen and cut it into pieces. Farmers raised two years of laying hens, only such chickens will have this yellow oil
Step 2: prepare the cooking material: 15g Angelica sinensis, 5 pieces of red ginseng, Chinese prickly ash, star anise, cinnamon and ginger. Because there is an old woman in my family who wants to nourish her, in addition to the seasoning, red ginseng and Angelica are added. Generally speaking, only Angelica can be added and red ginseng can be removed.
Step 3: put the chicken into the pot with cold water, cook until it will boil, skim the foam. The chickens raised by ourselves have very little foam
Step 4: then put all the meat ingredients in, bring to a boil over high heat, and turn to low heat to stew for 5 hours. If you don't have time, use a pressure cooker for 30 minutes
Step 5: the cooked chicken soup is covered with yellow chicken oil. Once again, it's hard to eat this kind of chicken now!
Step 6: add 250 grams of water and 3 grams of salt to 500 grams of flour to make a smooth dough. Now that there is a bread maker, I will let it do the dough mixing work, and use a dough mixing program to knead the dough in place. And then another 15 minutes. If there is no bread maker, knead the dough by hand for a while and smooth it. Divide the mixture into 10 parts and cover with plastic film for another 10 minutes. After rolling the long piece, you can press it with a rolling pin in the middle, which is convenient to pull noodles
Step 7: spread oil on both sides of the rolled dough, put it on the plate, cover it with plastic film and keep it for more than half an hour.

Step 10: pull the battered dough apart and put it into the pot to cook. Then put some green vegetables and bring it to a boil.
