Step 1: prepare all materials.
Step 2: chop the ribs into small pieces, soak them in water and remove the blood.
Step 3: cut the lotus root into thick slices.
Step 4: soak in water to prevent discoloration.
Step 5: put the spareribs in the pot with cold water, keep stirring after boiling, leave the fire after 1 minute, and wash.
Step 6: put the cleaned spareribs into a casserole and add enough water.
Step 7: add ginger, clove and cooking wine.
Step 8: boil over high heat and remove the froth.
Step 9: add lotus root slices and red dates.
Step 10: simmer over low heat for 1 hour until the meat is crisp.

Spare ribs: 4 pieces (about 500g)
Lotus root: 3 bars (about 250g)
Dahongzao: 4
Ginger: 3 slices
Cloves: 4
Cooking wine: moderate
Salt: right amount
Note: 1. I use the kind of ribs with cartilage inside. You can also choose other types. 2. The purpose of soaking raw ribs in water is to remove blood water. Generally, it takes half an hour. Don't forget to change the water in the middle. 2. I add cloves in the soup, because I think the taste of cloves matches the soup very well. If not, add star anise.
