Production steps:
Step 1: wash hairtail and cut into 5cm long segments.
Step 2: deep fry the eggs until golden.
Step 3: put a little cooking oil in the pot, saute shallot and ginger, then pour in the fried hairtail.
Step 4: pour hot water into the pot, add salt, cooking wine, white sugar, seasoning and stewing for 15 minutes.
Step 5: sprinkle a little pepper when out of the pot.

North tofu: 100g

Pepper: a little
Note: do not cover the hairtail at the beginning of stewing, and cover it after 5 minutes to remove the fishy smell effectively.
