Braised chicken with mushrooms
Introduction:

Production steps:
Step 1: pluck the residual hair of free range chicken and wash it;
Step 2: prepare the mushrooms;
Step 3: chop the chicken into small pieces;
Step 4: wash the mushrooms to remove the impurities and soak the hair in warm water. The water for soaking the hair doesn't need to be poured out. It can be used to stew chicken;
Step 5: slice ginger, peel garlic, dry red pepper, big sauce and cinnamon and wash;
Step 6: add proper amount of oil into the pot and stir fry all the accessories in step 5 until fragrant;
Step 7: pour in the chicken and stir fry until discolored;
Step 8: put in the soaked mushrooms, mix in sugar, cooking wine, soy sauce and salt, and turn the color evenly;
Step 9: pour in the water that has just soaked Lentinus edodes. The amount of water should not exceed all the ingredients. Simmer for about 30 minutes over medium heat, and finally collect the juice over high heat;
Step 10: put it into a large bowl and take it out of the pot.

Note: 1. The water used to soak Lentinus edodes doesn't need to be poured out. It can be used to stew chicken, and the flavor of Lentinus edodes is stronger. 2. When stewing chicken, the amount of water poured in should not exceed all the materials in the pot, too little is easy to dry.
