the eight immortals crossing the sea
Introduction:
"When I was a child in Gulangyu, my favorite was to go to the seaside, swim in summer, dig oysters in winter, and dig sea stone flowers. I remember once digging oysters on the rocks of dadeji beach, we saw two fishermen on a nearby fishing boat cooking. When they put Qinglan a (a kind of fish, Minnan dialect) and conch into the pot to cook, we were all surprised! ~~~~Later I learned that seafood can be stewed in one pot, and the taste is still so good! In 2007, I went back to Xiamen, where the husband of ah Ji, an old neighbor of Gulangyu, was the host. He invited me to eat the Eight Immortals crossing the sea. Eight Immortals crossing the sea is a clear soup made of various shellfish, fish, shrimp and crab. Enjoy the original taste
Production steps:
Step 1: get ready to eat
Step 2: soak the food for 2 hours except shrimp, then wash it with a brush.
Step 3: put proper amount of water, ginger, scallion, cooking wine in the pot, put down the clams and boil for 5 minutes.
Step 4: put down the crab, clam and razor clam and cook for 3 minutes
Step 5: Boil the snail and shrimp.
Step 6: when the clam shell is open and the crab shell is red, skim the foam from the soup.
Step 7: add pepper.
Step 8: turn off the fire and pick up the shellfish with a colander.
Step 9: put in a large bowl.
Step 10: after a little more than 1 minute, scoop the juice into a large bowl. (note that there is some sand at the bottom of the pot) sprinkle with scallion.

Note: 1. Because shellfish have some sand, so first use the colander to fish out the food, and then wait for the sand to settle, then scoop out the soup. 2. Clams are bigger and most difficult to cook, so put them down first. 3. Because the food contains salt, this soup does not contain salt. This clear soup does not contain oil. 5. This soup belongs to cold nature, which is taboo for those with cold stomach. 6. Food must be fresh!
