Production steps:

Step 3: pour the cooking oil into the clean pan (according to experience, pour a little more oil, the fried shredded potatoes are not only beautiful in color but also fragrant in taste). When the oil is 70% hot, put the pepper into the pan and fry it over low heat to remove the fragrance of pepper. Put the chopped green onion and ginger foam into the pot and saute until fragrant
Step 4: take out the water soaked potato shreds and drain them. Put the shredded red pepper into the pot, and pour in the shredded potato at the same time. Pay attention to wait half a minute before turning the shredded potatoes. (this is to make the chilli section hot when it comes into contact with the moisture on the shredded potatoes. Note that the pepper section should be placed at the bottom of the shredded potato.)
Step 5: turn the shredded potatoes. When the shredded potatoes are heated evenly, pour in three spoonfuls of white vinegar and turn it. (the vinegar should be poured into the empty position at the bottom of the pot. When the white vinegar is boiled, stir it with the shredded potatoes evenly, so that the vinegar will have a stronger flavor after being mixed with the shredded potatoes. If you don't consider the beautiful color of the dishes after the pot, you can stir fry them with vinegar in this way to make them taste more fragrant
Step 6: when the potatoes change color, pour in the chopped shredded green pepper and red pepper, add three teaspoons of salt and half a teaspoon of monosodium glutamate, pour one teaspoon of white vinegar twice, quickly stir fry until the green pepper is broken, and finally sprinkle with chives
