Tempura
Introduction:
"It's a finished product. It's about the same. I didn't do it myself. I'm sorry. "
Production steps:
Step 1: the first post, not fully prepared, I hope you understand! be deeply grateful! This is a picture from the Internet. i 'm sorry!
Step 2: prepare tempura powder: put tempura powder, water and egg yolk together according to a certain proportion, and stir with a blender (viscosity: stick the powder with your finger at 15cm away from the horizontal plane, and the powder should flow downward in a continuous straight line; there should be no dry particles in the powder).
Step 3: cut vegetables: cut into all kinds of shapes you like, and then stick a layer of dry tempura powder on the back, not too thick or too thin. You can see a piece of white; shrimp, except for the tail, should be covered with dry powder.
Step 4: hot oil: first open the fire and heat the oil to 150-180 degrees. Then keep the temperature constant over a small fire (oil temperature: drop a drop of slurry and add hot oil. As soon as the slurry reaches the bottom of the pot, it rises and then runs to the edge of the pot as the standard; if it doesn't reach the bottom of the pot, the oil is too hot; if it doesn't get up for a long time at the bottom of the pot, the oil is too cold. Remember, this is the key.
Step 5: fried vegetables: put your hand into the paste, paste the whole right hand (left hand can also be), lift, open five fingers, make the paste flow into the center of the oil. The high temperature of the oil will quickly run to the side of the pot, so repeatedly (action should be fast), until there is a layer of crispy tempura powder in the pot.
Step 6: put the main ingredients: when the powder in the pot becomes hard enough to bear the main ingredients, first put the sweet potato and pumpkin which are not easy to be cooked, then put the shrimp, and finally put the green pepper and eggplant (as long as the side just has dry powder, it must be covered with wet powder again, so that the whole body will be scared, and the tail will not be sticky. Remember).
Step 7: turn over the main ingredients: after all the main ingredients are put in, confirm that the main ingredients have been connected with the crispy paste on the surface of the pot, separate the main ingredients individually with chopsticks, then turn over and wait for the frying. You must know the order of the main ingredients. Finally, put the chopsticks into the dishes in turn. Turn off the fire.
