Homemade chili oil
Introduction:

Production steps:
Step 1: get the materials ready.
Step 2: soak the peanuts in water, wrap the skin, put proper amount of oil in the pot and heat it for 5 minutes, then add the peanuts, fry them slowly over low heat, and take them out slightly yellow to cool and set aside.
Step 3: put the fried peanuts in the plastic wrap and roll them with a rolling pin.
Step 4: put a small spoonful of salt in the dried chili.
Step 5: add proper amount of water into the shredded pepper. Don't use too much water. If the shredded pepper feels wet, mix the shredded pepper with water.
Step 6: shred onion and ginger, slice garlic and set aside.
Step 7: put oil in the pot, heat it 50%, change the low heat, add Zanthoxylum, star anise and fragrant leaves, deep fry it over low heat for 2 ~ 3 minutes, and take out.
Step 8: deep fry onion, ginger and garlic for 2-3 minutes.
Step 9: deep fry until the onion, ginger and garlic are yellowish and take out.
Step 10: add sesame and peanuts and fry for 2-3 minutes.
Step 11: pour in chopped pepper, boil over low heat, evaporate, cool slightly and add chicken essence.
Step 12: boiled chili oil is delicious.
