Ingredient: dried Hericium erinaceus 300 G.

Production steps of pine monkey head:
1. Put the Hericium erinaceus into the basin, inject warm water, soak for about 1 hour, then change the water to clean the sediment, then inject boiling water to soak for 1 hour, take it out, cut off the root and spectrum part with a knife, and wrap the Hericium erinaceus with gauze.
2. Put the clean hen, lean pork and cooked ham into the pot, pour in clean water (subject to the raw materials), bring to a boil, skim the foam, then put in the wrapped Hericium erinaceus, add 30g cooking wine, onion and ginger, and stew for about 3 hours on the fire.
3. Wash the cucumber with water, cut it in half, and then cut it into 6 pieces.
4. Take out the stewed Hericium erinaceus (without ingredients) and cut it into pieces, put it into a bowl, add 150g clear soup, add a little cooking wine and refined salt, steam in the drawer for about 20 minutes and take it out.
5. Cut the sauced beef into 1-cent-thick thin strips, and place it in the shape of pine branches on the edge of the big disk. Place the cucumber comb in the shape of tree leaves. Decant the juice of the Hericium erinaceus and buckle it in the middle of the disk.
6. Pour 250 grams of clear soup into the pot, add the remaining cooking wine and refined salt. For a good taste, use starch to thicken the sauce, pour chicken oil on it and pour it on the Hericium erinaceus.
