Steps for making Shoutao tofu:
1. Cut off the side skin of tofu and mash the shrimp. Put them in a bowl. Add egg white, onion and ginger juice, monosodium glutamate, refined salt and pepper. Stir. Add dry starch and mix well.
2. Cut the salted bread into pieces about 0.3cm thick and shape it into peach shaped pieces. Spread them flat on the chopping board, sprinkle a layer of dry starch and pat them evenly. Each piece is smeared with about 1cm thick bean curd mud and coated with egg white. Sprinkle minced ham on the peach tip and vegetable leaves on the bottom to make Shoutao tofu.
3. Put the frying pan on a high heat, add the cooked lard and heat it to 40%. Deep fry the Shoutao tofu until the bread is hard and yellowish. When the oil temperature rises to 70% heat, fry it again, pick it up and put it on a plate. Drizzle a little sesame oil and serve.

Production technology

Stir fry the pan over high heat, add the cooked lard and heat it to 40%. Deep fry the tofu until the bread is hard and yellowish;
When the oil temperature rises to 70%, fry it again, pick it up and put it on a plate. Pour a little sesame oil and serve.
