Raw materials for making Kyoto spareribs:
325g pork ribs, 1 egg, 10g green onion and ginger powder, 20g soy sauce, 15g Shaojiu, 50g sugar, 25g vinegar, 15g sesame oil, 50g flour, 10g Lake powder, 500g peanut oil.
Steps of making Kyoto spareribs:
1. Chop pork ribs into 2.8cm long pieces, add 5g Shaojiu and 5g soy sauce to soak them, then knock in one egg, mix well, add in flour paste and stir;
2. Heat up the frying pan, scoop in peanut oil and cook until it's six ripe. Put the ribs into the pan, disperse them with an iron spoon, fry them thoroughly, and pick them up with a leaky spoon. When the oil is 80% hot, put in the ribs and fry them again until they are crisp. Pour in the leaky spoon and drain the oil. Add a little oil, onion and ginger, Shaoxing wine, soy sauce and sugar to the wok. Add a little water and bring to a boil. Thicken with starch. Add vinegar and sesame oil. Pour into the spareribs. Turn them over evenly. Remove from the wok and put them on a plate.
Kyoto spareribs

Kyoto spareribs with garlic
