[chemical composition] besides protein, there are fat, carbohydrates (such as glycogen), organic acids, non protein nitrogenous substances (such as creatine) and inorganic salts. Triglycerides in adipose tissue contain extremely high palmitic acid. The main proteins were myosin, actin, tropomyosin, actin, albumin, myoglobin and hemoglobin. It contains more vitamins than the meat of temperate animals.
