Lianjiang Cuisine: braised duck feet and wings with Shajiang
Introduction:
"Shajiang is a kind of ginger that can only grow in the sand. It will rot slowly when it meets with water. It's also because of this special breeding method that it has a distinctive flavor. But remember that people with weak body or lust in stomach should eat less as far as possible, which has adverse effects. Shajiang is an important ingredient in Lianjiang. You can't eat chicken without it. Without it, it's like a kind of fragrance. This special flavor has been implanted into my taste memory since I was a child. It's a unique flavor of my hometown. "
Production steps:
Step 1: material preparation ing ~ ~ wash and smash the ginger (it must be patted, according to our local saying in Lianjiang, otherwise there is no natural flavor of the ginger). Cut the root and tip of the duck wing, wash and cut the coriander.
Step 2: heat the oil in a hot pan, add the ginger and stir fry for about 10 seconds.
Step 3: pour in duck's feet and wings, stir fry until 3-4 mature (skin color turns yellow).
Step 4: NAH ~ 3-4 mature is almost this color~
Step 5: pour in soy sauce (about one third of the amount of duck feet and wings).
Step 6: open the lid of the pot and start to stew. Stir fry it from time to time during the stewing process to make it dyed evenly.
Step 7: after boiling, turn down the heat and simmer until most of the duck's feet begin to crack (duck's feet are hard to cook). It's a beautiful color, isn't it?
Step 8: add coriander head, stir fry more than ten times, then sprinkle coriander leaves, cover and simmer for 1 minute.
Step 9: OK ~ ~ serve!
Materials required:
Shajiang: 1 liang
Duck feet and wings: 1 jin
Coriander: two
Soy sauce: right amount
Peanut oil: right amount
Note: 1. Don't ask for all the juice, as long as the duck's feet and wings are ripe! ~2. You don't need to use soy sauce to color, ordinary soy sauce is OK, and it can also color very well ~ 3. Don't add water, it will have a taste of raw soy sauce, not pure (mother said). 4. In addition to duck feet and wings, you can also add some streaky meat together, so that the oil and water of streaky meat will run into the soup, so that duck feet and wings will not be so dry. 5. We lianjiang people like to eat coriander raw, not used to the cheese can be cooked or not put it ~ personal preference~
