Introduction:

Production steps:
Step 1: wash the streaky pork, put proper amount of water, ginger, scallion, star anise and cinnamon into the pot, bring to a boil, add the meat and cook until it is just cooked (about 10 minutes, you can poke through the meat with chopsticks), pick it up, soak it in cold water and drain it
Step 2: cut the meat into large slices about 4cm wide
Step 3: smash the garlic and cut into segments
Step 4: heat the frying pan, add oil, stir fry the meat until the meat is rolled, drain the oil and leave the pan for later use
Step 5: stir fry 1 tbsp Pixian Douban into oil to get red oil. Stir dry pepper, cooking wine, sugar, Zanthoxylum, shredded ginger into the pan to make it fragrant
Step 6: put the sliced meat into the pot, add sweet flour sauce and stir fry with soy sauce
Step 7: stir fry the garlic sprouts
Step 8: take out the pot and put it on the plate

Note: 1: the meat should be fried dry to remove the greasy and enhance the taste. 2: it is recommended not to put salt (Pixian Douban, soy sauce, sweet flour sauce are salty). 3: stir fry the garlic sprouts quickly to keep the fresh green of the garlic sprouts. 4: in the fifth step, put some Douchi (no stock, save it)
