Production steps:
Step 1: blend the fresh yeast completely into the warm milk.
Step 2: all materials, except bamboo charcoal powder, are divided into two parts according to the proportion (such as 1:1, 2:3, 4:5, etc.). Mix the flour, sugar and milk with yeast. Then add natural yeast and mix at low speed. Take one of them (with a large amount of dough, the black "cow spot" will be more; otherwise, it will be less), add bamboo charcoal powder, and the color will be deep enough.
Step 3: divide the margarine into two parts according to the proportion, add them to the two dough respectively, mix evenly at low speed and mix at high speed for 3 minutes; add salt and continue to mix for 1 minute.
Step 4: cover with plastic film and ferment in warm environment for 90 minutes.
Step 5: the volume of fermented dough increases a lot.
Step 6: for white dough, use ordinary white flour as hand powder; for black dough, use bamboo charcoal powder as hand powder. Just don't cross the colors.
