We call it Huishui zongzi directly. Huishui zongzi is made from firewood. It is filtered by boiling water. The water is used to soak rice. After soaking, the rice is light yellow. After cooking, the color will be yellow and bright. It tastes soft and glutinous. It also has a sense of crispness. It has the effect of appetizer, heat clearing and detoxification. It is suitable for all ages. "
Production steps:
Step 1: put a proper amount of wood ash in the bamboo basket, boil a pot of boiling water, pour the boiling water on the wood ash, and put a jar under it. The water flowing down is gray water, which is yellow. The resulting water needs to be filtered a second time.
Step 2: after the filtered ash water is placed and precipitated, clean ash water is obtained for soaking rice. Rice should be washed with clean water three times in advance and then drained.
Step 3: soak the rice for about 24 hours, then take it out and drain some water to make zongzi. (soak in the daytime, at least overnight)
Step 4: prepare the rice dumpling leaves. (this is the leaf of zongzi made in my hometown. It can only be used after boiling and rinsing.)
Step 5: take a big leaf and hold it in your hand.
Step 6: lay a layer of small leaves on top of the big leaves, and then lay two in the middle.
Step 7: put some rice on it.
Step 8: fold the right side in first, then fold the left side back and hold it.
Step 9: fold it down with your right hand. (if the leaves are too long, you can cut some)
Step 10: wrap one end as well. (when it's turned over, the top will be staggered, and the rice won't leak out.)
Step 11: then put the middle section of the cotton thread under the middle of the rice dumpling, and loop the cotton thread from the outer end of the rice dumpling to the middle.
Step 12: tie it up.
Step 13: it's full of blue.
Step 14: cook zongzi. Set the time according to the size of zongzi. When cooking zongzi, turn it over and put the top one under it.
Step 15: you can take one and see if there is a whole grain of rice in the middle of the zongzi, which is softer and crisper.
Step 16: cut into a circle with cotton thread, sprinkle some sugar or honey.
