Laotan sauerkraut, shredded pork and rice noodles
Introduction:
"Sauerkraut, shredded pork and rice noodles is a home-made snack in Chongqing, but it is the taste that always belongs to home in my heart. The production process is also very simple. The key point is that the pickle is the best in our pickle jar. In my heart, the standard of good sauerkraut shredded rice noodles must be: sauerkraut, scallion, shredded meat, without white vinegar, without too much oil, without chicken essence, the natural sour and spicy taste. I eat sauerkraut shredded pork and rice noodles in the street shop. The old rule is "sauerkraut rice noodles" with "spicy chicken" (in our restaurant, you can add any ingredients in the rice noodles alone), leek and scallion on the table. That full bowl, that taste said is straight swallow saliva. But I still do my own cleaning at home and have less oil. "
Production steps:
Step 1: prepare ingredients: rice noodles, pickled cabbage, scallion, lean pork (if spicy, you can prepare several pickled peppers)
Step 2: cut the lean meat into thin strips
Step 3: put in proper amount of water, starch and salt for 10 minutes
Step 4: cut sauerkraut into shreds, wash and wring dry water, add a little more oil into the pot, put in the dried pepper section and saute until fragrant, add sauerkraut and stir fry over high heat, then put it into the pot and put it into a bowl
Step 5: put proper amount of oil in the pot, put the marinated shredded meat into the pot and stir fry until the shredded meat turns white
Step 6: pour in the sauerkraut and stir fry for a while
Step 7: pour proper amount of water or soup into the pot
Step 8: bring to a boil over low heat for 10 minutes, add appropriate amount of oyster sauce and pepper powder
Step 9: take another pot to boil water, bring the water to a boil, add the rice noodles, cook and put in a bowl
Step 10: drizzle with boiled sauerkraut broth and sprinkle with scallion
