Fried eggplant puree with oil saving sauce
Introduction:
"Everyone knows the smell of eggplant that has been oiled, but it seems very difficult to cook eggplant with good oil. But it's not totally impossible. I recently found a very fuel-efficient way to cook eggplant, which is to soften the eggplant in the microwave oven and then cook it in the normal way. Today, I'd like to start with a sweet and sour sauce with eggplant puree. The secret of delicious food is sauce, vinegar and sugar sauce, and pepper. The taste may be different from that of eggplant, but the same meal is delicious, and the more important thing is less oil and no burden. "
Production steps:
Step 1: wash the eggplant;
Step 2: cut the dice into the size of finger belly, put it into the microwave oven and "Ding" for 8 to 10 minutes until soft;
Step 3: dice green pepper, red pepper, green onion, ginger and garlic; put soy sauce, soy sauce, sugar and vinegar into a small bowl, stir well and set aside;
Step 4: stir fry in a wok, cool the oil in a hot pan, and saute shallot, ginger and half garlic;
Step 5: add the diced eggplant, turn to low heat, stir fry continuously and press with a spatula until the eggplant is cooked and rotten (stir fry slowly, be patient);
Step 6: add the sauce and stir fry until the eggplant is colored
Step 7: add a little boiling water, turn to high heat, stir fry until the soup is slightly thick;
Step 8: add the other half of garlic;
