Production steps:
Step 1: chop the spareribs into 5cm long pieces, wash them, put them in the pot, add water to the spareribs, bring the pot to a boil, and then skim the foam with a spoon. You can boil the foam with high heat, and the foam will float up, so it's easy to skim the foam clean
Step 2: put in the ginger pieces, add star anise, Chinese prickly ash, cooking wine and green onion, cover the pot over low heat and cook for 40 minutes. The ribs are well done
Step 3: take out the spareribs and control the soup, put them into the basin and sprinkle the dry starch, turn them up and down with both hands holding the basin, let the spareribs stick a thin layer of dry starch evenly, heat the frying pan, pour the salad oil or other edible oil, burn until it is slightly blue smoke, and put the spareribs in
Step 4: deep fry the spareribs in medium high fire until they change color. Take out the oil to control the oil. Don't fry them too dry. Pour out the oil in the pan and leave some bottom. Then put in 20 grams of rock sugar and slowly melt the rock sugar over a low fire
