Eat Spanish mackerel dumplings in winter solstice
Introduction:
"Today is the winter solstice. It snowed all night last night. It's all white. It's the right time to eat dumplings at home. Yesterday I treated Spanish mackerel well. Today I bought leeks and made Spanish mackerel dumplings. Let's have a dish!"
Production steps:
Step 1: first deal with the fish, soak the Spanish mackerel in advance (I bought the small one cheap, the big one is too expensive), and then open the mouth to wash the gills
Step 2: remove the head, cut the fish from the back with a knife, and cut both sides
Step 3: scrape off the meat with a knife and the meat on the fish bone. Do not throw away the skin and bone after scraping
Step 4: mix fish and pork (pork accounts for only a quarter), pour a little juice (cold boiled, add 2 teaspoons cooking wine and 2 teaspoons soy sauce)
Step 5: I bought the pork. I mixed the stuffing without chopping it (lazy man). The meat is a little big, so I put it into the cooking machine to wring it. When wring it, I need to add juice (lazy man uses lazy method, so I don't have to stir it with effort)
Step 6: stir the minced meat a little, cover it with plastic wrap and put it in the refrigerator overnight.
Step 7: wake up for half an hour with flour, egg, water and dough,
Step 8: Chop leeks with a little oil (no water). My mother-in-law made both steps, so I only took the final picture.
Step 9: take out the Spanish mackerel meat stuffing in advance, add some salt and ginger powder, mix well,
Step 10: put in leeks, pour proper amount of zanthoxylum oil and mix well
Step 11: knead the dough into strips and cut into evenly sized tablets
Step 12: flatten the preparation,
Step 13: roll into dough and make dumplings
Step 14: there are many kinds of dumplings. I can make three kinds of dumplings by myself. The first four rows are made by me, and the second row is made by my mother-in-law (left to right)
Step 15: boil water in the pan, boil dumplings, and then order cold water for the second time,
Step 16: cook and eat!
Step 17: it's delicious
