Delicious Guokui cake
Introduction:
"Guokui" is one of the "eight monsters in Shaanxi". It is called "Guokui like a lid", which is like a helmet. As the name suggests, it is also called Guokui. Guokui is well-known for its fine workmanship, such as "dry, crisp, white and fragrant". Hard and chewy, crisp inside and crisp outside, white and shiny, mellow and delicious. When I was very young, I used to eat this kind of cake. I remember that every afternoon, there was a strong man riding a car with a big bamboo basket tied to the back seat. It was full of this kind of cake, covered with a thick quilt, to prevent the cake from getting cold, and I was afraid that the cake would be dried by the wind. There is also a sharp knife in the basket. Cut as much as you buy. While riding, the strong man peddles: selling big cakes! Delicious cake! However, at that time, I didn't know that it was Guokui cake, one of the "eight monsters" in Shaanxi Province. I only knew that it was big cake, and it was really big. At that time, I was a child, small and not as tall as a bicycle. I felt that the cake was so big that it was as big as the big bamboo basket. Every afternoon, children are looking forward to passing in front of their own house. Although they don't buy it every time, they feel satisfied just by smelling the sweet pancake smell with the fragrance of sesame. Then, every three or five days, they will shout for adults to buy it. If they go late and don't buy it, they will groan for a long time. Now they can't buy it even if they want to eat it. Everyone goes out to work. Who else will guard the big basket at home! Alas, this kind of pancake in my hometown has disappeared with the progress of the times. Instead, it's machine-made pancakes and steamed bread. If you want to taste it again, I'm afraid you have to go to Shaanxi or DIY yourself! "

It's better to cover the pancake to reduce water evaporation and prevent it from being too dry; the legend of Guokui: Guokui began in the battle of Changping in the Warring States period, more than 1000 years earlier than Tang Dynasty. You can refer to the part of Changping in the great Qin Empire. According to legend, in the Tang Dynasty, the tomb of Emperor Li Zhi and Empress Wu Zetian of Gaozong was originally located at Wufeng mountain, 25 kilometers northeast of Zhongqian county. Later, due to the ominous fengshui of acupoints, it was selected on Liangshan Mountain, 3 kilometers north of Qianxian county. Liangshan Mountain is a scenic spot for the first emperor of the Qin Dynasty and Emperor Wen of the Sui Dynasty. It is located 80 kilometers northwest of Chang'an in Kyoto. It belongs to the position of Qian in the eight trigrams, so it is called Qianling mausoleum. Tens of thousands of craftsmen and migrant workers were requisitioned for the construction of Qianling mausoleum. At that time, there was a young man named dongwa, who lost his mother when he was a child and lived with his father. He was smart, hardworking and simple, and was praised by his neighbors. Unexpectedly, her father was bedridden because of illness. In addition to collecting firewood in the mountains every day, dongwa also came back to cook for her father. After doing this for a long time, she developed her cooking skills. When migrant workers were recruited to build the Qianling mausoleum, he worked for his father. Because of the large number of people, he had a heavy road to live, so he often couldn't eat on time. One day, he was so hungry that he couldn't support himself. He quietly dug a hole by the side of the road, put on his helmet, put the flour and flour in the helmet, and burned firewood under the helmet. After a while, he took out the steamed bun from the helmet and tasted it crispy and delicious. He was so happy that he told his companions about this method and asked them to use an iron pot to cook it. As a result, they tasted crispy and smelled fragrant, which spread from ten to 100, forming this unique guokuo bun. It is said that during the period of Wu Zhou (Empress Wu Zetian of Tang Dynasty), when the officers and soldiers built the Qianling mausoleum for Empress Wu Zetian, because of the huge project, a large number of migrant workers needed to work busily, and there were no cooking utensils on the construction site, so the officers and soldiers used helmets as cooking utensils to bake dough cakes, so they named it Guokui. From then on, the aroma of the tomb building site was full of fragrance. After the director tasted this kind of steamed bun, he felt good and sent someone to Chang'an, the capital. Therefore, the steamed bread was different. Later, the Tang Dynasty paid tribute to guokuo every year. This method of making steamed bread gradually spread to the people. Due to the continuous improvement of the production methods by the working people in the past dynasties, the quality of guokuo steamed bread has become better and better, and there are many styles. Since China's reform and opening up, the Qianling mausoleum has attracted many tourists from all over the world. They always like to eat Guokui steamed bun, a specialty of Qianxian county. When they leave, they have to take a few with them and give them back to their relatives and friends.
