Introduction:

Production steps:
Step 1: fill in all kinds of materials according to the order of main ingredients (except butter), first liquid, then sugar and salt, then flour, and finally yeast. Start a toaster's dough mixing process for 20 minutes (I use the ACA toaster). The milk here is not recommended to be added at one time, but 2 / 3 can be added first, and the remaining 1 / 3 depends on the water absorption of flour.
Step 2: after a dough mixing procedure, add 10 grams of butter, and then start a dough mixing procedure of the bread maker for another 20 minutes. It takes 40 minutes to make noodles. (otherwise, it takes time to make bread. It's just time to make noodles.)
Step 3: after 40 minutes of dough mixing, slowly pull the dough apart and a film will appear. The surface and dough have met the requirements. (according to baking predecessors, if the dough doesn't film, the final bread will be as hard as stone after cooling.)
Step 4: knead the dough and put it back into the bread barrel for fermentation until it is twice the size of the original dough.
Step 5: divide the bread into 12 portions of similar size, cover with plastic wrap and wake up for 10-20 minutes. I only woke up for 10 minutes. (who makes bread knows, it's hard to wait)
Step 6: in the process of waiting, let's make the bottom dip. Mix 5g white sugar, 10g low gluten flour and 5g sesame together and set aside.
Step 7: take out a piece of dough after waking up and roll it into a long piece, about 15-18cm long.
Step 8: roll the rolled bread from top to bottom.
Step 9: turn the rolled dough into two with a knife.
Step 10: erect the cut dough. Because it is too long, press it down with the palm of your hand so that it can stand on the dough.
Step 11: prick a hole in the thread of the rolled dough with chopsticks to make it gasp for breath and help it stand still.
Step 12: prepare some more drinking water, put it with the bottom dip, and it will be used soon.
Step 13: pick up a dough, dip it in the water first, then dip it in the primer.
Step 14: put the dough dipped in the base material into the baking tray covered with oil paper.
Step 15: a total of 24 small dough, my baking tray is too small to put, there are 8 small dough I put into the toaster to bake.
Step 16: carry out the second fermentation, the time is about 1-2 hours according to the room temperature.
Step 17: eight small dough in the toaster are also fermented.

Step 20: when the bread is out of the oven, brush the honey water while it is hot. Because of the high temperature of the bread, the honey water will soon dry, and you will see that the bread will soon become beautiful and the color will be more glossy.
