Production steps:
Step 1: wash the jujube and dry it in the air, then remove the core and cut it fine. The finer the jujube, the better, so as not to affect the taste of jujube skin;
Step 2: separate the egg yolk and protein, reserve the egg yolk, and ensure that there is no oil or water in the plate
Step 3: whisk the egg white until it is dry and foamy, that is, lift it up at a right angle, and then add the fine granulated sugar in three times;
Step 4: add brown sugar, water and 40 grams of grape seed oil to the yolk plate, and stir well;
Step 5: sift the low powder into 4, mix well until there are no granules, then add 60 g of jujube grains and mix well, the remaining 20 g for standby;
Step 6: add 1 / 3 of the protein into the egg yolk paste, and mix well with a scraper;
Step 7: add the egg yolk paste to the remaining 2 / 3 of the protein, and continue to cut it evenly. Do not circle it to avoid defoaming;
Step 8: mix a good cake paste;
Step 9: spread the remaining 20 grams of red dates evenly at the bottom of the mold;
Step 10: pour in the mixed cake paste and smooth it with a scraper; shake it on the table with your hand to shake out the big bubbles inside;
Step 11: put into the preheated oven, heat 170 degrees, about 45-50 minutes. After the cake is taken out, immediately put it on the cooling rack to cool, then demould, cut into pieces and enjoy
