Production steps:
Step 1: add water to the flour and make a dough with moderate hardness. Wake up for half an hour (it's said that the ordinary flour I use will be better with high gluten flour. I can try it next time).
Step 2: add water without dough.
Step 3: knead and pinch the dough to release starch (at this time, the dough will disperse, don't worry).
Step 4: when the water is thick, take another clean basin and filter the starch water into the basin. Change the water, continue to rub, filter, such as three or four times, until the water in the basin becomes clear.
Step 5: get a large basin full of starch water and settle it. Tilt the basin carefully for a few hours.
Step 6: take a flat bottom container (I used a cake mold with a side length of 18 × 18cm, and a round stainless steel shallow plate), mix the starch paste with a spoon, pour a spoon of batter into the mold, and then spread it on the bottom of the mold.
Step 7: add water to the steamer, bring to a boil, put the mould into the steamer cover and steam for two or three minutes.
Step 8: take it out and put it into a basin full of cold water to cool down.
Step 9: use the demoulding knife to draw along the four sides and lift up one corner.
Step 10: gently lift the cold skin with both hands.
Step 11: make a cool skin.
Step 12: spread the cold skin on a clean chopping board (because the finished product is cold, you must pay attention to hygiene), and apply a thin layer of oil on the surface to prevent sticking. Using two molds alternately can save time.
Step 13: after they are all finished, I put them into the mold and put them into the refrigerator for storage.
Step 14: steam the gluten in the steamer for 15 minutes until it's cooked (I haven't figured out how to steam this yet, and the finished product is not as porous as the take away one).
Step 15: take it out and cut it into strips of moderate width. Cut the gluten into small pieces, wash the cucumber and cut it into a little thick silk (it's too thin, the taste is a little bit not too good), mix it with your favorite seasoning, and then you can enjoy it (I added mashed garlic, sesame paste boiled with purified water, salt, chicken essence, a little sesame oil). If you like spicy food, you can chop up the dried pepper and cook it in hot oil.
