Shrimps with hairy tips
Introduction:
"Xinyang is rich in tea in Henan Province, Xinyang Maojian tea is very famous. So it's also a local characteristic to use tea as food. Hairy shrimp is one of them. Different from Longjing shrimp, Maojian shrimp needs to stir fry the tea. Although stir frying the tea will make the tea lose color, and even the color of shrimp is not good enough, after stir frying, the fragrance of tea is fully forced out, so that it can be integrated into the shrimp. It not only has the fragrance of tea, but also has good deodorization effect. Today, I have a fairly good command of the heat of the shrimp. The shrimp is very fresh and tender, but the oil temperature is too low when I pull the oil. The appearance of the shrimp is not good-looking. Continue to work hard next time
Production steps:
Step 1: peel and head the shrimp. Shrimp should choose a bigger one, otherwise the shrimp is too small to eat, ha ha.
Step 2: cut 1 / 3 from the back, and then pick out the shrimp thread from the back
Step 3: not only the shrimp line on the back, but also the black line on the abdomen. The shrimp I bought is bigger, and the shrimp I took out is bigger
Step 4: wash the treated shrimp with clean water, then control the water, and dry the surface with kitchen paper or clean cloth
Step 5: add a little salt and pepper
Step 6: stir well and marinate for 10 minutes
Step 7: after pickling, if water comes out, control the water, and then add a little dry starch to mix evenly
Step 8: pour in a little oil and stir well, so that the shrimps don't stick. Let it stand for another 15 minutes to recover its elasticity
Step 9: oil temperature 30% heat, quickly pull oil, let shrimp shape
Step 10: remove the filter oil
Step 11: make a cup of Maojian tea while processing shrimp
Step 12: a little oil in the pot, take out the soaked tea, squeeze it dry, and stir fry it
Step 13: stir fry out the flavor, then add the shrimps, and cook them in yellow rice wine while hot to remove the fishiness
Step 14: then pour about 30 grams of tea water
Step 15: stir fry a little to get out of the pot
